Ingredients: 3 medium sweet potatoes, peeled and cut into 1 inch chunks
2 Tbsp unsalted butter
½ cup heavy cream
salt and pepper
4 boneless, center-cut pork chops
1 Tbsp vegetable oil
1 medium onion, minced
2 tsp fresh thyme, minced
½ cup membrillo (alternately spiced rum or whiskey)
1 cup low-sodium chicken broth

Directions:Put sweet potatoes in a pot with enough water to cover and bring to a boil. Reduce heat and simmer potatoes until they are tender. Drain and return potatoes to pot. Add butter and ¼ cup cream and mash until smooth. Season with salt and pepper. Cover and keep warm.
Pat pork dry with paper towel and season with salt and pepper. Heat oil in a large skillet over medium-high heat. Cook pork chops until browned and cooked through (depends on thickness of port chop but approximately 5 minutes per side). Transfer to plate and let meat rest.
Add onions and thyme to empty skillet and cook over medium heat until softened. Remove from heat then stir in membrillo, scraping up all the brown bits left on bottom on pan. Return skillet to stove and cook until membrillo is of syrupy consistency. Add broth and remaining cream. Simmer mixture until sauce is slightly thickened.
Return pork chops and any juices that have accumulated to skillet and sauce mixture. Cook until sauce is thickened.
Plate sweet potatoes and pork chop. Finish with drizzle of membrillo sauce. |
