2 cups fresh pumpkin guts
3 1/2 cups flour
2 tsp baking soda
1 1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
3 cups sugar
4 eggs
1/2 cup water
1 cup vegetable oil
1 cup chopped pecans

Directions:

Preheat oven to 350º

Separate pumpkin guts using fingers and scissors to make sure it incorporates evenly into the batter.

Combine flour, baking soda, salt, cinnamon, nutmeg, and sugar before adding eggs, water, oil, and pumpkin guts. Fold in nuts.

Pour into 2 greased loaf pans and bake for 1 hour.

Using a hand or stand up blender can become problematic when you mix in the pumpkin guts because the stringy parts get all wrapped up in the whisk. If you want to use a mixer, use it for everything before the pumpkin guts and nuts.
