1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp vanilla extract
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 cup baker's coconut
2 cup old fashioned oats
2 cup puffed rice cereal
1/2 cup chocolate chips (optional)
1/2 cup nuts (optional)

Directions:

Preheat oven to 325º

Cream together butter, both sugars, eggs, and vanilla.

In separate bowl, sift together flour, baking soda, baking powder, and salt.

Incorporate the dry ingredients into the wet ingredients.

Fold in coconut, oats, cereal, chocolate chips, and nuts.

Place the dough on a cookie sheet in 1 teaspoon increments and bake for about 15 minutes.

If you want to leave out the chocolate chips and nuts, adding a touch of cinnamon makes them into a spice cookie reminiscent of an oatmeal raisin cookie. And go ahead and play with the mix ins and add raisins or cranberries instead!
