Miniature baking cups
1 (18.25 oz) package red velvet cake mix
2 (16 oz) containers cream cheese frosting
Finely chopped toasted pecans (optional)

Directions:
Directions:
Preheat oven to 350º. Line miniature muffin pans with baking cups. Prepare cake mix batter according to package directions. Spoon about 1 heaping tbsp batter into each baking cup, filling 2/3 full. Bake for 11 minutes or until a wooden pick inserted in center comes out clean. Remove from oven; let cool 5 minutes in pans on wire racks. Remove from pans; let cool completely on wire racks.

Spread cream cheese frosting on tops of cake. and sprinkle with pecans if desired.
