•1 oz goat cheese
•˝ cup cooked, cold quinoa
•1 bell pepper, chopped
•1 Persian cucumber, chopped
•4 oz grape or cherry tomatoes
•5 oz chickpeas, rinsed & dried
•Dressing:
•3 tsp olive oil
•1 tsp white vinegar
•splash of lemon juice
•sprinkle of black pepper

Directions:
Directions:
1. Whisk dressing in a small bowl, then transfer to the bottom of the jar
2. Layer chickpeas on dressing
3. Add tomatoes
4. Add cucumber
5. Add bell pepper
6. Add quinoa
7. Add goat cheese
8. Secure lid on tightly until ready to eat
9. Shake the salad just before eating
