4 pork chops (no bone)
1/2 cup bread crumbs
1/2 cup parmesan cheese, grated
3/4 tsp. salt
3/4 tsp. paprika
2 tbsp. flour
1 egg, beaten
2 tbsp. oil
1 onion, chopped
1 14 oz. can tomato sauce
1/4 tsp. oregano
4 oz mozzarella cheese, sliced

Directions:
Directions:
1. Pound meat. Mix crumbs, parmesan cheese, salt and paprika. Dredge meat with flour; dip in eggs then coat with crumb mixture
2. Heat oil and brown meat on both sides. Place in shallow baking pan.
3. Add onion to frying pan - sauté until golden. Stir in tomato sauce and oregano
4. Cover each meat with mozzarella cheese. Pour tomato mixture over top and sprinkle with parmesan cheese
5. Bake at 375 º for 40 minutes

Can be prepared with chicken in place of pork. Can be prepared the day before and baked on the day to be served.

Mom says "this recipe is from the Data Centre Cookbook. It was a collection of favourite recipes from a group of us that all worked together at the Data Centre in Borden in the late 80s. This recipe is great with chicken and pork. It turns out great every time."
