Homemade Macaroni and Cheese Recipe

1 box rotini or penne rigate pasta
2 Tbs. butter
2 Tbs. flour
2 c. milk, heated
1/3 c. heavy cream
salt and pepper, to taste
1 tsp. ground mustard
2-3 dashes Worcestershire sauce
1/2 tsp. garlic powder
2-3 Tbs. whole grain mustard
16 oz. sharp cheddar cheese, shredded
1/3 c. parmesan cheese
1 c. whole milk mozzarella cheese, shredded

Topping:
3-4 slices sour dough bread, toasted
6 slices of crisp bacon
4 Tbs. parmesan cheese

Preheat oven to 350º F. In large skillet, melt butter. Add flour and combine with a whisk to remove any lumps. Cook 2-3 minutes. Roux should remain light in color. Heat milk in microwave until hot, but not scalded. Add milk to roux and whisk to combine and remove lumps. Stir in heavy cream, seasonings, and mustard and whisk thoroughly. Add cheeses and stir until melted and smooth. Cheese sauce should be the consistency of cheese soup. (It will continue to thicken as it cooks in oven.) Lightly spray a 9x13-inch casserole dish. Stir pasta into cheese sauce and pour into prepared dish. Topping: Combine toasted bread, bacon, and parmesan in food processor and process until the consistency of bread crumbs. Season lightly with salt and pepper (You don't need much salt because of the bacon and parmesan.) Sprinkle crumbs over pasta, spreading evenly. Bake 30-45 minutes.
