2/3 cup boiling water
1 pkg. (3 oz.) watermelon Jell-O
1/2 cup cold water
Ice cubes
8 oz. Cool Whip, thawed
1 graham cracker crust

Directions:
Directions:
In a large bowl, stir boiling water into Jell-O. Stir for 2 minutes or until completely dissolved. Mix cold water and ice to make 1-1/4 cups. Add to Jell-O, stirring until slightly thickened. Remove any remaining ice. Stir in whipped topping with whisk until smooth. Refrigerate 10 to 15 minutes or until mixture is very thick and will mound. Spoon into crust. Refrigerate 4 hours or until firm. May garnish with candy watermelon slices, mint leaves or whip cream.

I use to make this often but the past few years it is hard to find watermelon Jell-O. You could substitute another flavor but it wouldn't be Watermelon PIe.
