1 1/2 C sugar
1/3 C cornstarch
1 1/2 C hot water
3 Egg yolks
4 T lemon juice
4 T Oleo
1 tsp lemon flavoring

MERINGUE:

3 Egg whites
1/4 tsp cream of tarter
6 T sugar
1/4 tsp lemon extract

Directions:
Directions:
In a saucepan, combine sugar plus cornstarch. Add hot water; stir and cook until thick. In a separate bowl beat egg yolks. Add (1/3 C) a little at a time to the beaten egg yolks. Then add this to the hot mixture. Add lemon juice and oleo; boil 1 minute. Remove from heat and add 1 tsp lemon extract. Pour into baked pie shell.

For meringue, beat egg whites, cream of tartar, sugar and lemon extract until stiff points form. Cover pie with meringue and bake until brown.
