4 tbsp. butter
4 tbsp. flour
1 1/2 tsp. salt
1/8 tsp. pepper
2 c. milk
6 medium potatoes
1 large onion, thinly sliced
1 tbsp. mushroom soup mix (optional)

Directions:
Directions:
Melt butter, stir in flour, salt, pepper. It will mix into a thick paste- called a roux. Add milk, stir until boiling. Pour over thinly sliced layered vegetables in casserole. Pour 1/2 sauce over half vegetables - repeat. Bake covered for 50 minutes at 350ºF and uncovered for 15 minutes.
