Soup bones
Sliced onion
Celery with leaves
Carrots
Chopped cabbage
Pearl barley or dried soup mix
2 or3 tbsp. tomato paste

Directions:
Directions:
Cover soup bones with water and simmer for 2-3 hours. Remove bones. Strain stock. To stock, add sliced onions, celery with leaves, diced carrots, chopped cabbage (whatever other vegetables you like- corn, peas, etc.) use vegetable water if possible. Cut any bits of beef off bones and add. For thickener, add pearl barley for beef and barley soup or dried soup mix (lentils, peas, etc.) about 1/2 c depending on amount of liquid,
Add 1-2 tbsp. dried onion soup mix and salt to taste. Simmer until dried barley or soup mix is tender, at least 1/2 hour.
