2 c. water
2 c. vinegar
1 1/2 c. sugar
1 tbsp. salt
1 tbsp. whole cloves
1 tbsp. mustard seed
1 tbsp. whole allspice
1 cinnamon stack
Small beets

Directions:
Directions:
Combine water, vinegar, sugar, and salt. Tie spices in a cheese cloth bag. Add to syrup, boil gently for 10 minutes. Let stand over night.
Cook beets until crisply tender, drain, and cover with cold water. Slip skins off. Cut off roots and stems. Remove spice bag from syrup and reheat to boiling. Add beets and simmer gently for 10-15 minutes to reheat beets. Pack beets in hot sterilized jars. Cover with hot syrup. Seal.
