2 tbsp fat (of your choice)
2 tbsp flour
1 tbsp minced onion
1 lb sauerkraut
1 can kidney beans or Roman beans (Mom used Roman Beans)
1/4 pt. sour cream
1 tsp. salt
1/4 tsp. paprika
6 c. water

Directions:
Directions:
Rinse sauerkraut with water, let drain.
Melt in a 2 qt. pot fat. Add flour, stir until well blended and turns a rich brown in color ( a rontosh ). When well browned add minced onion stirring until onions are soft. Remove from fire, add paprika, salt, pepper and sour Kraut. Mix well, add cold water, stirring it in slowly to keep it from clumping. cook for 20 mins. Add beans, cook for another 10 mins. Chill. When serving top each bowl with a tablespoon of sour cream.
