3 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tbls. cinnamon (I use cloves and ginger too)
3 eggs
1 cup oil
2 cups white sugar (can use 1/2 white and brown)
3 tsp vanilla
2 cups zucchini ar rhubarb
1 cup nuts or raisins

Directions:

Spray a bundt pan with non stick spray. Preheat oven to 325F.
Mix flour, baking powder, soda and spices in a bowl.
Beat eggs, oil, vanilla, and sugars together in a large bowl. Ad flour and beat well. I use a stand mixer. Stir in zucchini/rhubarb and nuts/raisins untill well combined.
Bake for 50 to 60 minutes. Cool on rack for 20 minutes. Turn out onto pl
