1 lb. Kroger Breakfast Sausage
3 cups frozen shredded hash brown potatoes
1/4 cup butter melted
12 oz. mild Cheddar cheese, shredded
1 onion, diced
1 (16 oz) container cottage cheese
6 jumbo eggs

Directions:
Preheat oven to 375. lightly grease a 9 x 13 baking dish. Cook sausage in a large deep skillet over medium high heat until evenly browned. Drain, crumble and set aside.
In the prepared baking dish, stir together the shredded potatoes and butter. Line the bottom and sides of the baking dish with the mixture. Bake the potatoes 20 minutes (this can be done the night before & left on counter till morning. In a bowl, mix together sausage, cheddar cheese, onion, cottage cheese and eggs. Pour over the potato mixture. Bake 1 hour or until a toothpick inserted into the center comes out clean. Let cool for 5 minutes before serving. Refrigerate any leftovers.
