250 to 500 g dry lutefisk per serving
lye water or hardwood ashes
1/2 sliced lemon
salt
2 tbsp. butter
paprika
white pepper
1 tbsp. sugar
1/2 c. flour

Directions:
Directions:
Fish:
Take dry lutefisk and soak it in a non-metallic container in a solution of lye water or hardwood ashes overnight. The next day, wash the fish in clean water until all trace of lye is gone.

Put clean fish in a large pot, and cover with cold water and 1/2 a sliced lemon. Salt to taste, and pepper. Simmer until the fish flakes. Serve with the cream sauce (instructions below).

Cream Sauce:
Put 2 tbsp. butter, 1tbsp. sugar, 1/2 cup flour, a pinch of paprika, a pinch of white pepper, and salte (to taste) in the top of double boiler. When butter melts, stir until smooth. If too thick, add milk until the sauce is the right texture. Can be served with lutefisk, peas, potatoes, etc.
