4 c chicken broth
3 c tomato juice
4 carrots, sliced
3 thinn-skinned boiling potatoes, scrubbed and chopped
2 med parsnips, peeled and sliced
1 onion, cut into eighths
1 rib celery, thinly sliced
1 clove garlic, smashed
1/4 c finely chopped fresh parsley
1/4 tsp cumin

Directions:

1. Combine broth and tomato juice in large saucepan and bring to a boil over med-high heat.
2. Add carrots, potatoes, parsnips, onion, celery, and garlic.
3. Reduce heat to med-low and simmer until vegetables are tender, about 45 minutes - 1 hour
4. Stir in parsley, cumin, and 1/4 tsp each salt and pepper.
5. Heat through
