Filling:
4 (8 oz.) pkgs. cream cheese
1-1/4 cups sugar
Grated rind and juice from one lemon
1/2 tsp. vanilla
4 large eggs

Crust:
1 stick butter, melted
3 Tbsp. sugar
2-1/2 cups graham cracker crumbs

Directions:
Directions:
Combine crust ingredients and press onto sides and bottom of a 9-inch springform pan. Set aside and make filling. Cream sugar and cream cheese. Gradually add lemon juice, rind and vanilla, beating until smooth. Add eggs, one at a time, beating thoroughly after each addition. Gently pour this into the crust. Bake at 375-degrees for 1 hour. Cracks may appear in cake this is not a problem.
