1/2 cup sugar
1 T cornstarch
1/4 tsp ground cinnamon
4 cups sliced peaches (about six medium)
1 tsp lemon juice
3 T oleo
1 cup flour
1 T sugar
1-1/2 tsp baking powder
1/2 tsp salt
1/2 cup milk

Directions:
Directions:
Mix 1/2 cup sugar, the cornstarch and cinnamon in 2 qt saucepan
Stir in peaches and lemon juice
Cook, stirring constantly, until mixture thickens and boils.
Boil and stir 1 minute.
Pour into ungreased 2 qt casserole, keep peach mixture hot in oven
Cut oleo into flour, 1 T sugar, baking powder, and salt until mixture resembles
fine crumbs. Stir in milk.
Drop by 6 spoonfuls onto hot peach mixture
Bake in 400 degree oven until top is golden brown, 25 to 30 minutes
Serve warm with whipped cream topping.

Blueberry Cobbler Substitute 4 cups blueberries. rest ingredients the same
Cherry Cobbler - Substitute 4 cups pitted red tart cherries, increase sugar to
1-1/4 cups, cornstarch to 3 T , and 1/4 tsp almond extract
substituted for the lemon juice
