½ cup cocoa
2 tsp. vanilla
1 1/8 cup cooking oil
2 cups all purpose flour
1½ cup sugar
1½ tsp. baking soda
½ tsp. salt
1½ cup ground canned beet
3 beaten eggs
Directions:
Directions:
Preheat oven to 350 degrees.
Combine cocoa, vanilla, and oil. Mix thoroughly. Sift flour, sugar, soda, and salt together, then add to cocoa mixture.
Grind beets or process in blender before measuring. Add beets and eggs to batter mixture. Pour into a greased and floured 10 x 14 inch pan.
Bake for 25 to 30 minutes.
