1 c. matzo meal
1 tsp. kosher salt
1/2 tsp. pepper
4 T, melted chicken fat or oil
2 tsp. baking powder
Pot of chicken stock and salt or just salted water

Directions:
Directions:
Separate yolks and whites from the eggs. Beat whites until stiff. Set aside. Beat yolks until light. Add the salt and pepper and beat in. Then add the chicken fat and beat until incorporated.Pour over the beaten egg whites and then gently fold in until incorporated. Mix the baking powder and the matzo meal. Gently fold the matzo meal mixture a spoonful at a time into the egg mixture. Cover with a clean towel and refrigerate for 1 hour. Boil the salted water or chicken stock until it is rapidly boiling. Wet hands and roll approximated 1 tsp. of mix and drop into the rapidly boiling water. When all of the mix has been rolled and dropped into the boiling water, lower the temperature and let the balls simmer fort 30 minuets. Remove with a slotted spoon and place into warmed soup for service.Discard the salted water or the very salty stock.
