1 cup warm water (I usually heat water to about 110º
1 (1/4 oz) yeast package
3/4 c Cornmeal **
1 tsp Salt
1 tsp Sugar
1/4 c Olive Oil
2 Tbsp Butter (melted)
2 1/2 c Flour

Pizza ingredients:
Italian sausage, pepperoni, mushrooms, sauted spinach, (fresh) garlic chunks, onion, (fresh) 8 oz mozzarella-sliced, provolone, shredded mozzarella and Parmesan, green peppers, etc. etc.

1. Preheat oven to 475º. This recipe makes enough dough for a 12'' round deep dish pizza, preferably cooked in a seasoned cast iron skillet.

2. Cornmeal (very important*) - use a coffee grinder to get the cornmeal extremely fine, so that you avoid a grainy texture. Once finely ground, sift into your mixer bowl.

3. Completely dissolve your (fine) cornmeal into warm water first and then add the yeast, salt, sugar, olive oil and melted butter. Using a kitchen aid, use the whisk to stir mixture for 10 minutes.

4. Add one cup of flour to the mixer and use the dough hook to mix it up well. Add the remaining flour 1/4 cup at a time until you can handle and kneed the dough without it sticking to your hands. You may not need the whole 2 1/2 cups of flour, or you may need more. You will have to use your judgement. Just remember not to let the dough get too hard, or to have it too soft.

5. Take the dough out of the Kitchen Aid mixer and kneed it by hand on a countertop. If you have made the dough right you will not have to put flour down, or you will only need a minimal amount. Kneed the dough for 3-5 minutes.

6. Oil the ball (lightly!) and place dough ball back in the bowl. Cover with a sheet of plastic wrap or a warm, damp towel. Let the dough rise until doubled in size. This may take anywhere from 1/2 to 1 1/2 hours.

7. After the dough has risen, punch down the dough into a ball. Place the ball of dough on the counter and flatten it with your hand. Then using a rolling pin to roll the dough into a uniform circle 1/4 inch thick.

8. Oil bottom of skillet with Canola oil (not Olive oil), and then carefully lay your dough inside. Form the crust by stretching the dough about 1 1/2 to 2 inches up the side. Cover the pan with plastic wrap and let the dough rise again until your oven is preheated to 475º.

9. Melt 2 Tbsp butter and use basting brush to coat crust surface with melted butter.

Assemble pizza:
-First cheese (1/2 tp 3/4 inches deep)
-Next meat and vegetables
-Then sauce** (Don't put too much sauce on or you will end up with a soggy pizza)
-Finally parmesan cheese

10. Back pizza for 15 minutes at 475º. Lower the temperature to 400º and back pizza an additional 10-25 minutes until crust is golden brown and cheese is browning.

This can be a vegetarian or meat dish. We have had both are they are delicious. Your preference.

**The most important part of this recipe is the sauce. The best sauce to use is a can called "6 in 1, All-Purpose Ground Tomatoes (with added extra heavy puree)". You'll be happy your tried it.
