1 onion, finely chopped
6 tbsp butter
2 c cornmeal
2 tsp salt
2 tsp sugar
1/2 tsp pepper
1/2 tsp cinnamon
7 c 2% milk, warmed
1 c whipping cream
5 eggs, beaten

Directions:
Directions:
In a large pot cook onion in butter carefully not browning onion. Add cornmeal, salt, pepper, sugar, and cinnamon. Mix to coat onion. Very slowly add milk, stirring constantly to avoid lumps from forming. Continue cooking until thickened. Remove from heat and blend in cream, fold in beaten eggs.

Pour mixture into a large greased baking dish. Bake uncovered in a preheated 350º oven for
1 1/2 hours until browned on top.

Note: Can be made 1 day in advance (stir and let come to room temperature before baking).
