20 to 25 pounds beef tripe
5 to 6 pounds pork feet or beef ox tail cut up
2 tbsp granulated garlic
2 tbsp salt
4 to 5 oz mundo spices
1 gallon white hominy drained
4 to 5 serrano peppers chopped up
1 medium onion chopped fine

cut up beef into 1 inch pieces
put into 18 quart cooker with the pig feet or ox tail and add the garlic and salt add the water about 15 quart and boil for 5 to 6 hours or until tripe is soft add the mundo spices and stir turn down heat and cook for 1 to 2 hours add the hominy and stir put on low heat to keep warm. put peppers and onion in a dish and enjoy
