12 Tbsp. butter, divided
1 cup brown sugar
1/4 cup pineapple juice
5 whole pineapple rings
1/2 cup milk
1 egg
1-1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1/2 cup sugar

Directions:
Directions:
Preheat oven to 400-degrees. Melt 4 Tbsp. of the butter; stir in brown sugar. Continue to heat until dissolved. Remove from heat and add pineapple juice. Arrange the pineapple rings in one layer in an 8 or 9-inch cake pan. Set aside. Melt the remaining 8 Tbsp. butter in a small pan. Remove from heat. Stir in milk and egg, beating well. Mix the flour, baking powder, salt and sugar in a bowl. Add milk-egg mixture and beat until smooth. Pour over the pineapple slices. Bake for about 40 minutes or until a toothpick comes out clean. Let cool in pan for 10 minutes. Turn out on a plate, fruit side up. Serve with whipped cream, if desired.
