1 box yellow cake mix
1 cup self rising flour
1/2 Cup sugar
follow instructions from mix
1 can crushed pineapple
1 Box Confectioners sugar
1/2 Cup milk -room temperature
1/4 stk butter
1 small pkg cream cheese
vanilla flavoring

Directions:
Directions:
Mix cake according to instructions - adding extra flour and sugar will make 3 layer cake. Incorporate a teaspoons of pineapple juice in the mix. Once cake is mixed, pour into prepared floured cake pans and bake at 350 degrees until done. Test with a fork in center. If it comes out clean, cake is done. Let cake layers cool and sweat before removing from pans.

Frosting
1 box of confectioner's sugar
1/4 softened butter and cream cheese
a dash of vanilla
A few drops of milk
Mix carefully until there is a fluffy consistency
Let frosting stand until ready to frost cake

Remove pineapple from can and save juice
Stack first cooled layer cake
Smooth 1 -2 spoonfuls of drained pineapple on top of layer
top with frosting and repeat until all layers are stacked
one the third layer is placed - continue to place the frosting on entire
cake. Store in refrigerator. When serving - drizzle pineapple juice on each slice before serving

This recipe is the closest to my Aunt Nora's Pneapple cake. I remember her baking these around Christmas time along with her Japanese Fruit cakes. It was not Christmas until I sampled both - the Pineapple cake and the Japanese Fruit cake. As a child, we would visit Aunt Nora and Uncle Cleveland and all my cousins on Sundays after church in Rose Hill, NC. Those were some of the best times just being with my 10 cousins. I loved my cousins so much, all 10 of them!
