Notes: This recipe is the closest to my Aunt Nora's Pneapple cake. I remember her baking these around Christmas time along with her Japanese Fruit cakes. It was not Christmas until I sampled both - the Pineapple cake and the Japanese Fruit cake. As a child, we would visit Aunt Nora and Uncle Cleveland and all my cousins on Sundays after church in Rose Hill, NC. Those were some of the best times just being with my 10 cousins. I loved my cousins so much, all 10 of them!
