4 cascadura fish
Fresh Trinidad seasonings such as greens, black pepper, hot peppers, garlic
Salt and pepper to taste
1 cup flour mix with 2 beaten eggs
1/4 cup beer

Directions:

Make a fish batter.
Wash fish with lime & salt.
Season fish with all seasonings.
Dip in batter and deep fry.
Fish can be used in salads, curries, fish chowders and more.
