Chicken thighs with the bone and skin removed
Italian Bread crumbs
2 eggs (more if needed)

Directions:

1. Clean chicken and remove the skin
2. Whisk the eggs in a bowl
3. Put some bread crumbs in a large baggie
4. Dip chicken pieces one at a time in the eggs then put them in the bag. Shake the bag to get the crumbs on the chicken. Place the chicken in a baking dish sprayed with Pam. Cover with foil
5. Bake chicken for 1 - 1 1/2 hour until done. Flip chicken one time half way through baking. Remove the foil for the last 10 minutes of baking.
