2 (9 inch) deep-dish pie crusts
1/4 cup butter
1 cup chopped onions
1/2 cup chopped bell pepper
1/2 cup chopped celery
3 T Cajun seasoning
1 can Rotel tomatoes
14 oz. peeled crawfish tails
2 T all-purpose flour
1 cup cold water

Melt butter in a large skillet over medium heat, stir in onions, bell pepper, and celery and Cajun seasoning. Cook until onions are clear (about 5 min). Stir in the Rotel tomatoes and crawfish tails, reduce heat to medium-low, continue to cook for 5 to 10 minutes for flavors to blend, stirring occasionally.

Whisk flour and water together in a bowl until there are no lumps, pour the flour mixture into the crawfish filling in skillet. Bring filling to a simmer and cook stirring constantly until the mixture thickens, about 5 to ten minutes. Remove from heat and allow to stand for 20 minutes to finish thickening.

While filling is cooling, preheat oven to 400 degrees. Pour the filling into the pie crust, cover with second crust cut slits for steam to vent and bake until golden brown. Recipe can be doubled and the second pie can be frozen uncooked till needed.
