1/2 cup butter
1/4 cup sugar
1 egg separated
1 tsp. flavouring
1 cup sifted flour
Nuts - finely chopped
Jam or jelly

Directions:
Directions:
Cream butter and sugar. Add beaten egg yolk, flavouring and flour.

Shape into small balls. Dip into unbeaten egg whites and then finely chopped nuts.

Dent in centre with a thimble.

Place on greased baking sheet and bake in oven for 5 minutes at 350ºF.
Dent again.

Bake 12 to 15 minutes. Fill with jam or jelly while still hot.

Christmas is not complete without a tray of Thimble cookies. Ours were always filled with homemade raspberry jam.
