2 c. water
1 tsp. salt
1 c. long-grain white rice
1 c. low-fat cottage cheese
1, 4 oz. can chopped mild green chilies
1, 4 oz. jar chopped pimiento
1/2 to 1 tsp. chili powder
1-3 drops hot red pepper sauce, or to taste
1 c. grated Monterey Jack cheese (about 4 oz.)

Preheat oven to 400 degrees.
Bring water to boil, adding salt.
Add rice, stir once, then cover and reduce the heat to low.
Cook for about 18 minutes, or until water is absorbed and rice is tender.
Meanwhile blend cottage cheese in a blender. Add green chilies, pimiento, chili powder and hot sauce.
Stir with spoon. Stir into hot rice. Pour into buttered casserole or souffle dish and top with grated cheese.
Bake for 20 minutes, or until cheese is bubbly and casserole is heated through.
