- 6 cups boiled and cubed potatoes
- 4 hard boiled eggs (diced)
- 1/2 cup chopped celery
- 1/2 cup chopped sweet pickles
- 1/3 cup chopped radishes
- 1/2 cup chopped onions (sautéed)
- 3 tbsp. white sugar
- 1 tbsp. white vinegar
- 1 1/2 tbsp. Dijon or yellow mustard
- 1/2 tsp salt
- 1/2 cup mayo (regular, not light!)
- 1-2 tbsp. extra virgin olive oil

Directions:

Mix sugar, vinegar, mustard, mayo and salt together well in the same dish you will be serving the potato salad in. Lightly saute onions in olive oil until they become translucent and set aside to cool. Boil potatoes until they become fork tender then drain. Add onions, potatoes, celery, radishes, eggs and sweet pickles to your already prepared dressing. Toss well to coat. Refrigerate until it is time to eat!

Additional sauce may be made and added to the potato salad if you like it a bit more "saucy". Goes great with grilled chicken or steak. Be sure to saute those onions! It makes sure they don't overpower the potato salad!
