2 c Sugar
1 1/4 c Oil
3 c Flour
3 c Diced Apples
2 Eggs
1 tsp. Vanilla
1 tsp. Salt
1 tsp. Baking Soda
1 c. Chopped Nuts
1 tsp. Cinnamon

Directions:
Directions:
Beat sugar and oil until creamy, add eggs and beat. Add sifted dry ingredients. Stir well, add apples, nuts and stir in vanilla. Bake 1 hour at 350º in a 10 x 14 x 2 inch pan. Mix the flour mixture in by hand. Batter will be very stiff.

Broiled Icing:
3 tbsp. Melted Butter
10 tbsp. Brown Sugar
2 tbsp. Cream or Milk
1/8 tsp. Salt
1/2 c Coconut or Chopped Nuts
Combine all ingredients and spread on a cake while still warm.
Place very low under a broiler with a low flame. Broil until the icing bubbles and browns.

I remember mom making this. The smell of the warm apple cake would fill the house and the broiled icing was sweet, crunchy and yummy!
