2 c Flour
5 Egg Yolks OR 3 Egg Yolks and 1 Egg
2 tsp. Salt
1/4 to 1/2 c Water

Directions:
Directions:
Make a well in the center of the flour. Add eggs and salt. Mix thoroughly.
Mix in water one tbsp. at a time until dough is stiff and easy to roll out.
Divide the dough into 3 or 4 equal parts and roll dough on lightly floured board 1 part at a time until paper thin. Keep remaining dough covered.
Loosely fold into thirds and cut into 1/8 or 1/4 inch strips. Shake out strips and allow to dry, about 2 hours.
Break dry strips into smaller pieces. Cook in 3 quarts boiling salted water (1 tbsp. salt) until tender, 12-15 minutes. Drain. To cook 1/2 the noodles, use 2 quarts water and 2 tsp. salt.
Noodles can be covered and stored up to 1 month.
