3 well beaten eggs
1 1/4 c. milk
3/4 c. sifted flour
1 T sugar
1/2 tsp. salt
1 T vanilla

Beat eggs then mix together with other ingredients in blender. Use medium skillet and fry in butter. Once cooked, cover with a gratuitous amount of butter, cheap pancake syrup (or maple syrup if you live in a tipi in Vermont), and sifted powdered sugar.

Dad made these for us growing up. I think it was a Granny recipe, but if not it is still a Ritchie Classic! Seems this might have come from Barbara Nelson Fisher, Cindy's cousin.
