Preheat oven to 450 degrees. Wipe the roast with a damp cloth and rub it with salt and pepper. Insert meat thermometer, if one is available, in the thickest part of the roast. Place the meat on a rack in a roasting pan. Cook the meat 25 min. and then reduce the heat to 300 degrees. It is not necessary to baste the roast. Cook the meat until the thermometer registers 140 degrees for rare, 150 degrees for medium-rare, 160 degrees for medium, or 170 degrees for well done. If a meat thermometer is not used, cook 16 to 18 min. per lb. for rare, 18 to 20 min. per lb. for medium-rare, 20 to 22 min. per lb. for medium, or 26 to 30 min. per lb. for well done.
