1 cup cider vinegar
1 cup beet juice (add water, if necessary to make 1 cup)
½ cup brown sugar (packed)
1 tsp. salt
6 hard-boiled eggs, shall
1 (15 ounce) can small round beets

Directions:
Directions:
Boil the first 4 ingredients gently for 5 minutes. Place beets and eggs in quart jar in alternate layers. Cool the liquid then pour over eggs and beets and refrigerate overnight or up to 3 days. To serve, cut eggs in halves or quarters.

I don’t think mom used a recipe when she made these. I found this one and it seems pretty close. I remember having these for holidays frequently when we lived in Texas.
