¼ cup butter, softened
1 tablespoon chopped fresh chives or parsley (actually I use fresh tarragon)
1 clove garlic, minced
3 whole chicken breast (about 2 ¼ pounds)
1½ cups crushed cornflakes (I use Panko crumbs instead)
2 tbsp. chopped fresh parsley
½ tsp. paprika
¼ cup buttermilk or milk
salt and pepper to taste

Mix butter, herbs of your choice, and garlic. Shape into rectangle, 3 x 2”. Cover and freeze about 30 minutes or until firm.
Grease square pan, 9 x 9 x 2”. Remove skin and bones from chicken breast. Cut chicken breast in half. Flatten each half to ¼ inch thickness between plastic wrap or wax paper. Cut butter mixture into 6 pieces. Place one piece on center of each chicken breast half. Fold long sides over butter. Fold ends up and secure with toothpick. Make sure the butter is completely enveloped.
Mix crumbs, parsley, and paprika. Salt and pepper chicken breasts, then dip into buttermilk. Coat evenly with crumb mixture. Place chicken, seam side down, in prepared pan. Bake uncovered about 35 minutes or until juices run clear. Carefully remove toothpicks. If you do it just right, the butter flows out when you cut into them. Yum
