12 fresh jalapenos
8 ounces cream cheese, softened
1 cup shredded cheddar cheese
6 slices bacon
If desired salt, pepper, Tony Chachere’s season salt, finely diced green onion

Directions:
Directions:
Lay peppers on their side and try to find the most stable position. Cut ¾-inch slice off the top side—lengthwise. (Note: most recipes call for cutting the jalapenos in half. I prefer to just cut off this strip so that the cheeses are held in better.) Carefully remove seeds and white pith.
Cut the bacon slices in half. Fry briefly until slightly browned but still limp. Mix together cream cheese, cheddar cheese, and seasoning if desired. Stuff the peppers with the cheese filling. Place one browned bacon slice over the cheese across the top of each jalapeno.
Grill jalapenos over low flame until peppers are slightly browned and cheese filling is bubbling.

Many recipes call for wrapping the jalapeno in a full slice of bacon, but I find a half slice tastes just as good and allows the jalapenos to brown a bit during cooking . . . fewer calories too.
