Ingredients: ½ pound (2 sticks) unsalted butter 4 cups cider vinegar 2 cups vegetable oil 2 cups fresh lemon juice 2 cups Worcestershire sauce 1 cup prepared mustard 1 medium onion, minced 3 garlic cloves, minced 2 tbsp. cayenne pepper (Call me a chicken. I use much less than this, closer to 1 tsp.) 2 tbsp. salt (If you don’t have unsalted butter just use 1 tablespoon salt.) 1 tablespoon freshly ground black pepper

Directions:In a large, non-aluminum saucepan, combine all of the ingredients over low heat. Simmer. Stir occasionally for 1 hour. Baste the meat with the mopping sauce as it cooks. To make a delicious brisket, I place the brisket in a glass baking dish, fat side up. Pour in enough of the sauce to cover the meat. Wrap in foil and bake in 300° oven for a few hours, until tender but not falling apart. Check periodically to make sure it is not getting dry. Baste it. Then grill over hot coals to get a nice char and until fully cooked. Baste with mopping sauce as it cooks. Let rest then slice thinly across the grain. Serve with your favorite barbecue sauce for eating. |

Notes: Some barbecue sauce is meant to be used while cooking and some to put on the meat after it is cooked. This mopping sauce is meant for cooking. I have used it on chicken, pork, and ribs. But I like it best on brisket.
