4 eggs, lightly beaten
4 cups half-and-half
2 tsp. salt, plus a pinch
˝ tsp. freshly ground pepper
1 tbsp. unsalted butter
1 yellow onion, finely diced
3 tbsp. chopped fresh sage, or 1 tbsp. dried sage
2 tbsp. white wine
6 cups (1 inch) rustic bread cubes. Don’t use a very soft bread for this.

Grease a 2 quart baking dish. In a large bowl, mix the eggs, half and half, 2 tsp. salt, and pepper, set aside. Heat the butter in a skillet over medium heat. Add the onions, sage, and pinch of salt. Cook until the onion is soft and translucent about 10 minutes.
Add the wine, stirring to remove any bits of onion from the bottom of the pan, and cook until wine evaporates, about 1 minute. Remove the onion mixture from the heat, and cool to warm.
Mix the bread with the egg mixture and onion, combine thoroughly. Let stand for 10 minutes so the bread can absorb the liquid.
Transfer the bread mixture to the prepared baking pan, pressing it gently into the pan. Cover with foil and bake for 20 minutes. Remove the foil, and bake an additional 30 minutes, or until the pudding is set and lightly browned. Remove from the oven, and let the pudding rest for 10 minutes before serving.

I have made this several times. It’s very different but very tasty. Serve it like you would stuffing with chicken or pork.
