1 stick unsalted butter
¼ cup unsweetened cocoa powder
2 cups all-purpose flour
1 cup granulated sugar
½ cup buttermilk
2 large eggs
1 tsp. baking soda
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. powdered instant espresso or coffee (I use Starbucks Via)
½ tsp. salt
¼ cup walnuts or pecans (optional)
FROSTING
3 ½ cup confectioners’ sugar
1 stick unsalted butter, melted
¼ cup unsweetened cocoa powder
¼ cup +2 tbsp. milk
1 tsp. vanilla
1 tsp. powdered instant espresso or coffee
1 tsp. cinnamon

CAKE: Butter and flour a 15” x 10” x 2” baking pan. In a small saucepan, combine the butter, cocoa, and 1 cup of water over moderate heat. Bring to a boil and remove from heat. In a large bowl, sift together the flour and sugar. Add the melted cocoa mixture and beat with an electric mixer at medium speed until well blended. Continue beating and add the buttermilk, eggs, soda, vanilla, cinnamon, instant coffee, and salt. The batter will be light. Fold in the nuts, if wanted. Pour the batter into prepared pan and bake at 400° for 20 minutes. The cake will be very moist. Place on wire rack.
FROSTING:In a large bowl, combine the confectioners’ sugar, melted butter, cocoa, and milk. Mix well and stir in vanilla, instant coffee, and cinnamon. When the cake has cooled for 15 minutes, spread the icing over the cake while it is still warm. (Note I do not put the nuts into the batter. I put them on top of half of the warm cake icing. That way I can please those who like nuts and those who don’t.)
