Ingredients:
12 eggs
Mayonnaise
Mustard
Horseradish
Salt
Pepper or hot sauce

Directions:
Hard boil eggs using your favorite method. I place the eggs in a pan with cold water. Bring them to a boil. Then put a lid on the pan and set it aside for 12 minutes. Immediately run cold water and ice cubes over eggs.
Remove shells. Cut eggs in half lengthwise. Carefully take out the yolks being careful not to break the whites.
Smash egg yolks in a bowl with a fork or pastry cutter until smooth. I can’t tell you how much mayonnaise or mustard to use. It’s somewhere around three-quarter cup mayonnaise and a quarter cup mustard. But you’ll have to just take it slowly and find the taste and consistency that’s right for you. Add a little horseradish, salt, pepper, hot sauce to taste.

Personal Notes:
I also like to add things like finely diced dill pickles, or green peppers. Sorry I can’t be more specific folks. I learned this one from Mom, and she doesn’t need to measure!
