4-5 lb chuck roast
1 large vidalia or sweet onion diced
3 large red, green and/or orange bell pepper, diced
3 cloves fresh garlic minced
1/4 cup red burgundy or merlot wine
2 large bay leaves
1 tsp dried oregano
1 tsp ground cumin
2 Tbsp apple vinegar
1 small can tomato sauce
1 large lime juiced
6 oz tomato paste
1 can diced tomatoes
1 tsp Worcestershire sauce
1 tsp garlic powder
2 tsp salt
1/2 tsp black pepper
1/2 cup beef broth
1/4 tsp cayanne pepper, optional
3 sprig(s) fresh cilantro diced

Directions:
Directions:
Pat dry chuck roast and season with salt and pepper. Sear chuck roast and brown with olive oil. Place roast and all ingredients except the cilantro in crockpot and cook low for 6-8 hours until roast is fork tender and falling apart. Remove roast, let cool and shred with 2 forks. Add meat back into crockpot. Add cilantro and simmer until sauce has thickened. Serve over rice.
