3 eggs, 1 c. oil, 2 c. sugar, 2 t. vanilla
2 c. shredded zucchini, 8 1/4 oz. can crushed pineapple
3 c. flour, 1/2 t. baking powder, 2 t. baking soda, 1 t. salt, 1 1/2 t. cinnamon
1/2 t. nutmeg, 1 c. nuts, chopped (optional), 1 c. mashed bananas

Directions:

Beat eggs, add oil, sugar, vanilla and beat until thick and foamy. Mix in zucchini, pineapple and banana. Combine dry ingredients and add to zucchini mixture. Don't over mix. Put into greased and floured loaf pans, fill to 1/2 to 3/4 full, and bake for an hour or so at 350º.

I loved Sis's cooking. She was always trying to feed us; and, even though they were very poor, she and Aunt Dess would always have something for company. They also taught me how to can for the first time. I miss them. This recipe card in my recipe book, has their phone number on it. I could always call Sis and she would tell me how to make just about anything or tell me anything about flowers or vegetables. I always said when I get old, I want to still be working like Sis and Dess, amazing ladies. I am glad my kids remember them.
