3 1/2 c. flour (500g)
1 T. wheat germ (10g)
2 t. salt (10g)
1 t. yeast
1 1/2 c. water (340g)

Mix in a large bowl and let rise 3 hours. Divide dough into 2 pieces. Roll out into a rectangle and roll up, forming a skinny loaf. Place bread on a baking peel, dusted with cornmeal. Let rise 45 minutes. Preheat oven 1 hour before baking to 460º placing a baking stone and a cast iron skillet in oven to preheat also. When risen, carefully slide bread into oven onto the hot baking stone. Quickly put one cup of water into cast iron skillet for steam and shut the oven door and bake it for exactly 22 minutes, checking at 20 minutes.

Ashley showed us how to make this bread and it has been a favorite since. It is a simple French baguette but it does take time, so plan accordingly. It is an easy bread when you want to make a special company meal. It is lovely served whole, letting your guests just tear off the portion size they desire.
