1 1/2 c. Old Fashioned Oats
3/4 c. honey
1/2 c. butter
1 1/2 T. salt
3 c. boiling water
3 packages yeast or 7 1/2 t.
3 c. boiling water
3 eggs
4 c. whole wheat flour
4-5 c. white flour
3-4 T. gluten enhancer (optional, bulk bins Winco)

In a large bowl, add boiling water to oats and butter. Let cool a little, add honey, salt, yeast and egg. Whisk for 5 minutes. Then use dough hooks adding flour a little at a time till dough starts to clean the bowl. Let rise in a warm place until double. Form 4 loaves, place in greased bread pans and let rise again and bake at 350º for 15 to 20 minutes. Should be a nice dark brown and sound hollow when tapped.

Jill showed me how to make this simple bread years ago, and when I want a homemade, sandwich type bread this is the recipe I pull out. It is great when it first comes out of the oven with butter and jam. My kids would all gather round for a slice of warm bread.
