3 c. very hot tap water
1/2 c. butter, melted
1/3 c. sugar
2 1/2 t. salt
2 packages dry yeast
9 - 9 1/2 c. flour

Directions:
Directions:
In a large bowl, combine water, butter, sugar, and salt. Stir in yeast and let stand until bubbly (about 15 minutes). Beat in about 5 cups of flour to make a thick batter. Stir in enough of the remaining flour to make a stiff dough. Knead for 10 to 20 minutes. Put in a greased bowl; cover and let rise in a warm place until doubled (about 1 hour). Punch dough down and form into dinner rolls, French bread, etc. Let rise until they are the right size and then bake in a 375º oven until golden brown and sound hollow when tapped.

This recipe was handed down by the owners of the Sheep Shed in Nampa. They raised sheep and did tours for school children. There is a huge Basque population in Idaho and if you go out far enough you can still see Basque sheepherders with their flocks of sheep in the hills.
