1/2 lb. lean ground beef
1 onion, chopped, divided
3 cloves garlic, minced, divided
2 tsp. dried oregano leaves, divided
20 PREMIUM Saltine Crackers, finely crushed
1 egg, beaten
1 Tbsp. oil
2 cans (14 oz. each) reduced sodium beef broth
1 can (14-1/2 oz.) stewed tomatoes, undrained (or diced)
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained

Directions:
Directions:
Combine meat, 1/4 cup onions, 1/3 of garlic and 1/2 tsp. oregano in large bowl. Add cracker crumbs and egg; mix well. Shape into 1-inch balls.

Cook remaining onions and garlic in hot oil in Dutch oven or large
saucepan on medium-high heat 3 to 5 min. or until onions are tender. Add broth, tomatoes, spinach and remaining oregano; bring to boil. Add meatballs; cover. Simmer on low for 30to 35 min. or until meatballs are done.
Serve with additional saltines. This soup is very hearty and filling so perfect
for a well balanced easy meal. I boil a small pasta of choice separately and add 1/2 a cup to each bowl of soup to make it a complete meal.
