1/4 lb butter
1-1/2 c chopped onions
1/4 c flour
1t salt
1/2 t pepper
Defattted turkey or other drippings + heated chicken stock to make 2 c
1 T brandy
1 T white wine (optional)
1T heavy cream (optional)

Directions:
Directions:
In large sauté pan cook butter and onions till soft and slightly browned 10 - 15 min
Don't rush onions should be well cooked
Sprinkle flour and whisk
Add s/p
Cook 2-3 min
Add broth and brandy
Cook 4 - 5 min till thickened
Add wine and cream if using
Season, taste and serve

This is from Ina Gravy. Mom use to tell a story that when she was in hospital having me,
Dad asked her how to make Gravy. The story goes that he used 2 cups of flour not 2 T. You can imagine the results. Perhaps that is why I have always been a bit insecure in the Gravy department. This recipe is pretty fool proof and good to make ahead adding the drippings at the last minute.
